Heat water to approximately 43°C (110°F) - warm but not hot to touch. Add yeast and whisk together. Set aside.

In a large bowl, combine flour, sugar, and salt. Pour in the water-yeast mixture and stir until a dough forms. Add an extra tablespoon of water if needed, but maintain a thick consistency that isn't overly sticky.

Lightly flour a countertop. Divide the dough into 8 equal portions and roll each into a rope. Slice each rope into 1-inch pieces to create bite-sized portions.

Lightly spray the air fryer basket with cooking oil. Arrange pretzel bites inside with space between each piece for expansion. Brush the tops with melted butter.

Cook at 200°C (400°F) for 7 minutes or until the pretzel bites are lightly browned on top.

Remove from air fryer and allow to cool slightly before transferring to a serving plate. Brush with remaining butter and sprinkle with pretzel salt.
