Avocado Grapefruit Fennel Salad (Printable Version)

Crisp fennel, creamy avocado and tangy grapefruit create a refreshing salad with homemade citrus dressing and shaved parmesan.

# Ingredients:

→ Salad Components

01 - 1 fennel bulb, thinly sliced
02 - 1 ripe avocado, peeled and cut into chunks
03 - 2 pink grapefruits, peeled and segmented
04 - 2 handfuls lightweight greens (pea shoots, baby spinach, or watercress)
05 - Parmigiano-Reggiano cheese, shaved

→ Citrus Dressing

06 - 60 ml fresh squeezed grapefruit juice
07 - 60 ml extra virgin olive oil
08 - 2 tablespoons white balsamic vinegar
09 - 1 tablespoon minced shallot
10 - 1 teaspoon grainy brown mustard
11 - ½ teaspoon kosher salt
12 - Freshly ground black pepper to taste

# Steps:

01 - Combine grapefruit juice, olive oil, white balsamic vinegar, minced shallot, grainy mustard, salt, and pepper in a jar with a fitted lid. Close the jar and shake well until emulsified.
02 - In a large salad bowl, combine the sliced fennel, avocado chunks, grapefruit segments, and greens. Drizzle with 3-4 tablespoons of the prepared citrus dressing.
03 - Season with additional salt and freshly ground pepper if needed. Top with shaved pieces of Parmigiano-Reggiano cheese and serve immediately.
