Place the chicken breasts on a sheet pan and pour half of the balsamic mixture over them, ensuring even coverage.

Add the mixed vegetables to the sheet pan and drizzle the remaining balsamic mixture on top. Toss the vegetables to coat them evenly.

Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 74°C (165°F) and the vegetables are tender.
