Banana Chocolate Chip Muffins (Printable Version)

# Ingredients:

01 - 2 cups all-purpose flour
02 - 1 teaspoon baking soda
03 - 1/2 teaspoon salt
04 - 1/2 cup (113g) unsalted butter, melted
05 - 1/2 cup granulated sugar
06 - 1/4 cup packed light brown sugar
07 - 2 large eggs
08 - 1 teaspoon vanilla extract
09 - 3 medium ripe bananas, mashed
10 - 1 cup semi-sweet chocolate chips, plus extra for topping

# Steps:

01 - Preheat oven to 190°C (375°F). Line a 12-cup muffin tin with paper liners or grease thoroughly.
02 - In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
03 - In a large bowl, whisk melted butter, granulated sugar, and brown sugar until smooth and well incorporated.
04 - Add eggs one at a time, whisking thoroughly after each addition. Stir in vanilla extract.
05 - Fold mashed bananas into the wet mixture until just combined.
06 - Gradually add the dry ingredients to the banana mixture, stirring until just combined. A few lumps are acceptable; avoid overmixing.
07 - Gently fold in 1 cup of chocolate chips until evenly distributed.
08 - Divide batter evenly among muffin cups, filling each about two-thirds full. Sprinkle additional chocolate chips on top of each muffin if desired.
09 - Bake for 18-22 minutes, until a wooden skewer inserted into the center comes out clean.
10 - Allow muffins to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
