In a large bowl, mix soy sauce, sriracha, honey, rice vinegar, olive oil, garlic powder, smoked paprika, and pepper. Add chicken chunks and toss well. Cover and marinate for at least 30 minutes (up to 4 hours).

Soak bamboo skewers in water (if using). Thread marinated chicken pieces onto the skewers, spacing them out slightly.

In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey (optional), and lime juice until smooth. Set aside.

Preheat a grill or grill pan over medium-high heat. Lightly oil the grates.

Place skewers on the grill and cook for 10–12 minutes, turning occasionally. Baste with bang bang sauce during the last few minutes.

Transfer skewers to a serving plate, drizzle with more bang bang sauce, garnish with sesame seeds, parsley or cilantro.
