Chicken Kofta with Garlic Yogurt (Printable Version)

Aromatic spiced chicken shaped into traditional kofta, grilled to perfection and served with a refreshing garlic yogurt sauce.

# Ingredients:

→ Main

01 - 500g ground chicken
02 - 1 medium onion, finely chopped
03 - 3 cloves garlic, minced
04 - 1/4 cup fresh parsley, finely chopped
05 - 1 teaspoon ground cumin
06 - 1 teaspoon ground coriander
07 - 1 teaspoon salt, or to taste
08 - 1/2 teaspoon black pepper, or to taste

→ Yogurt Sauce

09 - 1 cup plain yogurt
10 - 2 tablespoons lemon juice
11 - Pinch of salt

→ For Cooking

12 - 2 tablespoons olive oil

# Steps:

01 - In a large mixing bowl, combine ground chicken, chopped onion, minced garlic, and parsley.
02 - Add ground cumin, coriander, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.
03 - With dampened hands, shape the mixture into elongated oval koftas, approximately 8-10 cm long.
04 - Preheat the grill or grill pan over medium-high heat and brush with olive oil to prevent sticking.
05 - Grill the kofta for 5-7 minutes on each side until golden brown and cooked through to an internal temperature of 74°C.
06 - In a small bowl, mix yogurt, lemon juice, and a pinch of salt to make the garlic yogurt sauce.
07 - Serve the hot kofta with the garlic yogurt sauce alongside.

# Notes:

01 - For a more authentic flavor, let the meat mixture rest for 30 minutes before shaping the kofta.
02 - These kofta can be prepared in advance and refrigerated for up to 24 hours before cooking.
