Chocolate Covered Strawberries (Printable Version)

Fresh strawberries dipped in rich melted chocolate - a classic treat that's both elegant and surprisingly simple to prepare.

# Ingredients:

01 - 16 oz fresh strawberries

→ Chocolate & Oils

02 - 8 oz high-quality semi-sweet chocolate chips
03 - 1 Tbsp coconut oil

→ Optional Decoration

04 - 2 oz dark, milk, or white chocolate chips
05 - 3/4 tsp coconut oil

# Steps:

01 - For organic strawberries, place in a colander and rinse well under cold running water, tossing occasionally, then drain thoroughly. For conventionally grown strawberries, soak in a solution of 4 parts water to 1 part vinegar for 5 minutes, then rinse and drain thoroughly in a colander.
02 - Dry each strawberry individually with paper towels, then set aside to continue air-drying while preparing the chocolate. Strawberries must be completely dry, as any moisture will prevent the chocolate from adhering properly.
03 - Combine chocolate chips and coconut oil in a small microwave-safe bowl. Heat in 20-second intervals, stirring thoroughly between each interval until completely melted and smooth. Allow to cool briefly if too runny, until slightly thickened.
04 - Place chocolate chips and coconut oil in a heatproof bowl (glass or stainless steel) that fits securely over a saucepan. Add about 1 inch of water to the saucepan and bring to a simmer. Reduce heat to low, place bowl over saucepan, and stir constantly until chocolate has completely melted. Remove from heat.
05 - Line a baking sheet with parchment paper. Hold each strawberry by the leaves and dip into melted chocolate, coating nearly to the top. Tilt the bowl to pool chocolate to one side, rotating the strawberry to ensure even coating. Lift and allow excess chocolate to drip off, then slide the strawberry across the inside edge of the bowl to remove excess chocolate.
06 - Place dipped strawberries on parchment paper with the side that touched the bowl's edge facing down. Transfer to refrigerator and chill until chocolate hardens, approximately 15 minutes.
07 - Melt 2 oz of chocolate chips (dark, milk, or white) with 3/4 tsp coconut oil using either method above. Transfer melted chocolate to a small resealable bag, seal, and snip a tiny corner from one point. Drizzle decoratively over set chocolate strawberries, then return to refrigerator until solidified.

01 - For best results, enjoy chocolate-dipped strawberries within 12 hours of preparation.
02 - Store in a single layer in an airtight container in the refrigerator.
