01 - 4 medium sweet potatoes, peeled and cut into 1-inch cubes
02 - 3 tablespoons olive oil
03 - 2 tablespoons honey
04 - 1 teaspoon ground cinnamon
05 - Salt to taste
06 - Fresh parsley, chopped (for garnish)

# Steps:

01 - Preheat your oven to 425°F (220°C).
02 - In a large mixing bowl, combine the sweet potato cubes with olive oil, honey, ground cinnamon, and salt. Toss well to ensure the sweet potatoes are evenly coated.
03 - Spread the coated sweet potatoes in a single layer on a baking sheet lined with parchment paper.
04 - Place the baking sheet in the preheated oven and roast for 25-30 minutes, or until the sweet potatoes are tender and caramelized, stirring halfway through for even cooking.
05 - Once roasted, remove the sweet potatoes from the oven and transfer them to a serving dish. Sprinkle with chopped fresh parsley for a pop of color.
