In a bowl, toss the zucchini rounds with olive oil, breadcrumbs, Parmesan (if using), garlic powder, salt, and pepper until evenly coated.

Place the zucchini slices in a single layer in the air fryer basket. Don't overcrowd—work in batches if needed.
