In a bowl, whisk together the egg, milk, salt, onion powder, and garlic-pepper seasoning until well combined and pale yellow. Stir in the Cheddar-Jack cheese until thick.

Spray a skillet with cooking spray and place it over medium-low heat. Pour the egg mixture into the skillet. Cook and stir until the eggs are set, about 5 minutes. Transfer to a plate.

Lightly butter one side of each bread slice.

Spray the skillet with cooking spray again. Place one slice of bread, buttered-side down, in the pan. Top with half of the mozzarella cheese, the egg mixture, the remaining mozzarella, and the remaining bread, buttered-side up. Cook until the bread is toasted and browned, for about 1 to 2 minutes. Flip and cook until the other side is browned, and the cheese is melted, another 1 to 2 minutes.
