Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil. Place the turkey bacon slices in a single layer and bake for 15–18 minutes, or until crispy. Drain on paper towels.

Brush both sides of each bread slice with olive oil. Toast in a skillet over medium heat or use a toaster oven until golden and crisp.

Slice tomatoes and sprinkle with flaky sea salt. Wash and dry the lettuce or arugula. Slice avocado if using.

Spread garlic aioli on the toasted bread. Layer with lettuce, tomato slices, turkey bacon (3 slices per sandwich), and avocado. Season with black pepper and top with the second bread slice.

Cut sandwiches in half diagonally and serve immediately with chips, salad, or soup.
