Wash and cut the potatoes into halves or quarters. Pat dry thoroughly with paper towels.

In a large skillet, heat 1 tablespoon olive oil and 1 tablespoon butter over medium heat. Add potatoes, season with salt, pepper, and Italian seasoning. Cook for 15 minutes, turning occasionally, until golden brown and tender. Remove and set aside.

Pat steak cubes dry with paper towels and season generously with salt and pepper.

Increase heat to medium-high. Add remaining tablespoon of olive oil to the skillet. Sear steak bites in batches for 2-3 minutes per side until nicely browned. Remove and set aside.

Reduce heat to medium-low, add remaining 2 tablespoons butter and minced garlic. Sauté for 30 seconds until fragrant but not browned.

Return steak and potatoes to skillet. Toss gently to coat everything in the garlic butter. Garnish with freshly chopped parsley before serving.
