Juicy chicken thighs seared with garlic, herbs and buttery mushrooms for a simple yet impressive meal.

# Ingredients:

→ Protein

01 - 4 boneless chicken thighs

→ Produce

02 - 10 mushrooms, sliced
03 - 2 cloves of garlic, finely chopped
04 - 1 tablespoon fresh parsley, finely chopped

→ Fats & Oils

05 - 2 tablespoons olive oil
06 - 2 tablespoons butter

→ Seasonings

07 - 2 tablespoons lemon juice
08 - ½ teaspoon onion powder
09 - ½ teaspoon garlic powder
10 - ½ teaspoon dried rosemary
11 - Salt and pepper to taste

# Steps:

01 - Trim excess fat from chicken thighs. Pour lemon juice over the chicken and set aside.
02 - In a small bowl, combine onion powder, garlic powder, dried rosemary, salt, and pepper. Coat the chicken thighs evenly with this seasoning mixture.
03 - Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken thighs and sear until browned on both sides, about 10 minutes total. Remove chicken from pan and set aside.
04 - In the same skillet, melt butter and add sliced mushrooms. Pan-fry until soft and golden brown, approximately 5 minutes.
05 - Add the chopped garlic and parsley to the mushrooms. Sauté for about 1 minute until fragrant. Add a splash of water to deglaze the pan, scraping up any browned bits.
06 - Return chicken to the skillet with the mushroom mixture. Adjust seasoning with salt and pepper if needed. Simmer for 5 minutes until chicken is cooked through and flavors have melded.

# Notes:

01 - For extra flavor, use chicken stock instead of water when deglazing the pan.
02 - This dish pairs well with roasted potatoes or steamed rice.
