Trim excess fat from chicken thighs. Pour lemon juice over the chicken and set aside.

In a small bowl, combine onion powder, garlic powder, dried rosemary, salt, and pepper. Coat the chicken thighs evenly with this seasoning mixture.

Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken thighs and sear until browned on both sides, about 10 minutes total. Remove chicken from pan and set aside.

In the same skillet, melt butter and add sliced mushrooms. Pan-fry until soft and golden brown, approximately 5 minutes.

Add the chopped garlic and parsley to the mushrooms. Sauté for about 1 minute until fragrant. Add a splash of water to deglaze the pan, scraping up any browned bits.

Return chicken to the skillet with the mushroom mixture. Adjust seasoning with salt and pepper if needed. Simmer for 5 minutes until chicken is cooked through and flavors have melded.
