Garlic Parmesan Sheet Pan Shrimp (Printable Version)

# Ingredients:

01 - 2 lbs extra large shrimp, peeled & deveined

→ Aromatics

02 - 3 garlic cloves, minced
03 - 1/3 cup fresh basil, chiffonade

→ Vegetables

04 - 2 small zucchini, sliced into 1-inch coins
05 - 1 small yellow squash, sliced into 1-inch coins
06 - 3/4 cup cherry tomatoes

→ Seasonings

07 - 2 tablespoons olive oil, plus extra for vegetables
08 - 2 tablespoons grated parmesan cheese
09 - 1/2 teaspoon smoked paprika
10 - 1/4 teaspoon black pepper
11 - Salt, to taste

# Steps:

01 - Preheat oven to 400°F (200°C).
02 - Place the peeled and deveined shrimp in a large mixing bowl.
03 - In a small bowl, combine minced garlic, smoked paprika, black pepper, parmesan cheese, and 2 tablespoons olive oil. Mix thoroughly with a spoon until well incorporated.
04 - Pour the garlic parmesan mixture over the shrimp. Using your hands, toss until all shrimp are evenly coated.
05 - In a separate bowl, combine zucchini coins, yellow squash coins, and cherry tomatoes. Drizzle with olive oil and season with salt and pepper. Toss to ensure even coating.
06 - Spread the seasoned shrimp and vegetables on a baking sheet in a single layer. Use an additional baking sheet if needed to avoid overcrowding.
07 - Bake in the preheated oven for 12 minutes, or until shrimp are pink and cooked through.
08 - Remove from oven, sprinkle with fresh basil chiffonade, and serve immediately.
