01 - 1 lb lean ground beef
02 - 1 medium onion, chopped
03 - 3 cloves garlic, minced
04 - 1 cup bell peppers (any color), diced
05 - 14.5 oz can diced tomatoes (with juices)
06 - 2 cups elbow macaroni or egg noodles
07 - 2 cups low-sodium beef broth
08 - 1 tbsp Italian seasoning
09 - Salt and pepper to taste
10 - 1 cup shredded cheese (optional)

# Steps:

01 - Heat olive oil in a large skillet over medium heat. Sauté onions and bell peppers until soft, about 5 minutes.
02 - Push vegetables aside and brown the ground beef, breaking it apart with a spatula for about 6-8 minutes.
03 - Stir in minced garlic and cook for an additional minute. Mix in canned diced tomatoes with their juices.
04 - Pour in beef broth and add uncooked pasta, stirring well. Cover and let simmer on low heat for about 10-12 minutes until pasta is tender.
