Ground Beef Enchiladas (Printable Version)

Seasoned beef wrapped in tortillas, covered with enchilada sauce and cheese, then baked until golden and bubbly.

# Ingredients:

→ Beef Mixture

01 - 1 lb lean ground beef
02 - 1 medium onion, diced
03 - 2 cloves garlic, minced
04 - 1 tsp cumin
05 - 1 tsp chili powder

→ Assembly

06 - 8 flour or corn tortillas
07 - 2 cups enchilada sauce
08 - 1 cup shredded cheddar or Monterey Jack cheese
09 - Sour cream for serving

# Steps:

01 - Preheat oven to 375°F (190°C).
02 - In a skillet over medium heat, brown the ground beef with diced onions until onions are translucent, about 5-7 minutes.
03 - Add minced garlic, cumin, and chili powder to the beef mixture. Sauté for another minute until fragrant.
04 - Spoon the beef mixture onto each tortilla, roll tightly, and place seam-side down in a greased baking dish.
05 - Pour enchilada sauce evenly over the rolled tortillas and sprinkle with shredded cheese.
06 - Bake uncovered for 20-25 minutes until the sauce is bubbly and cheese is golden.

01 - Serve with a dollop of sour cream on top for added creaminess.
