Magic Lemon Cobbler (Printable Version)

# Ingredients:

→ Batter Base

01 - ½ cup unsalted butter, melted
02 - 1 cup all-purpose flour
03 - 1½ teaspoons baking powder
04 - ¼ teaspoon salt
05 - 1 cup granulated sugar
06 - 1 cup buttermilk or whole milk
07 - 1 teaspoon vanilla extract
08 - 1 teaspoon lemon extract (optional)

→ Filling

09 - 21 ounces lemon pie filling or lemon curd

# Steps:

01 - Preheat oven to 350°F (175°C). Place the butter in a 9×9-inch baking dish and melt it in the preheating oven.
02 - In a mixing bowl, combine flour, sugar, baking powder, and salt. Stir in buttermilk, vanilla extract, and lemon extract (if using) until a smooth batter forms.
03 - Pour the batter evenly over the melted butter in the baking dish. Do not stir. Spoon the lemon pie filling or curd evenly over the batter.
04 - Bake for 45-55 minutes until the top is golden brown and the edges are bubbling.
05 - Allow to cool slightly before serving warm. Optionally top with whipped cream, ice cream, or fresh berries.
