Mini Cherry Clafoutis (Printable Version)

A classic French dessert with fresh cherries baked in sweet custard batter until golden and puffed, served warm with powdered sugar.

01 - 1 lb fresh cherries, pitted
02 - 3/4 cup all-purpose flour
03 - 1 cup granulated sugar
04 - 4 large eggs
05 - 1 1/2 cups whole milk
06 - 1 tsp vanilla extract
07 - 1/4 tsp salt

08 - Powdered sugar, for dusting

# Steps:

01 - Preheat the oven to 350°F (180°C) and grease a 9-inch pie dish.
02 - Arrange the pitted cherries in a single layer in the pie dish.
03 - In a bowl, whisk together flour and sugar. Add eggs one at a time, whisking well after each addition.
04 - Gradually whisk in the milk, vanilla extract, and salt until the batter is smooth.
05 - Pour the batter over the cherries in the pie dish.
06 - Bake for 45-50 minutes or until the clafoutis is set and golden on top.
07 - Let it cool slightly, dust with powdered sugar, and serve warm.

# Notes:

01 - Clafoutis is traditionally made with unpitted cherries, as the pits are said to add flavor, but pitted cherries make for easier eating.
