One-Pot Mushroom Rice (Printable Version)

A simple yet flavorful dish combining earthy mushrooms and tender rice cooked together with Asian-inspired seasonings.

# Ingredients:

→ Rice Base

01 - 1 cup jasmine rice (or long-grain white rice), rinsed
02 - 1 1/2 cups water or vegetable broth

→ Mushrooms & Vegetables

03 - 225 g mushrooms (shiitake, cremini, or button), sliced
04 - 1/2 small onion, finely chopped
05 - 2 cloves garlic, minced
06 - 1/2 cup chopped green onions (plus more for garnish)

→ Seasonings & Aromatics

07 - 2 tablespoons soy sauce
08 - 1 tablespoon sesame oil
09 - 1/2 teaspoon salt (adjust to taste)
10 - Pinch of black pepper
11 - Toasted sesame seeds for garnish (optional)

# Steps:

01 - Rinse rice, slice mushrooms, and chop onion, garlic, and green onions.
02 - Heat sesame oil in a saucepan over medium heat. Sauté onions for 2–3 minutes. Add garlic, cook 30 seconds, then add mushrooms, salt, and pepper. Cook 4–5 minutes until softened.
03 - Stir in rinsed rice, water or broth, and soy sauce. Cover and bring to a simmer. Reduce heat to low and cook 15–18 minutes, until rice is tender and liquid absorbed.
04 - Let rest 5 minutes. Fluff with a fork, garnish with green onions and sesame seeds, and serve warm.
