Peach Tomato Caprese Salad (Printable Version)

Juicy peaches and tomatoes paired with creamy mozzarella, fresh basil, and drizzled with pesto vinaigrette and balsamic glaze.

# Ingredients:

01 - 8 ounces fresh mozzarella, sliced
02 - 2 peaches, cut into wedges
03 - 3 heirloom tomatoes, sliced
04 - Fresh basil leaves
05 - 3 tablespoons fresh lemon juice
06 - 1 tablespoon pesto
07 - 1 teaspoon honey
08 - Kosher salt and fresh ground black pepper, to taste
09 - Balsamic glaze, for drizzling

# Steps:

01 - In a small bowl, whisk together the lemon juice, pesto, honey, salt and pepper. Taste for seasoning and set aside.
02 - On a large serving plate, arrange the slices of tomato, mozzarella, peaches and basil leaves. Drizzle the pesto vinaigrette over the salad. Finish with a drizzle of balsamic glaze or aged balsamic vinegar.
