# Ingredients:

→ For the Chicken

01 - 4 boneless, skinless chicken breasts (about 900g)
02 - 1 fresh pineapple, cored and cut into 1.5 cm rings
03 - 2 tablespoons olive oil
04 - Salt and freshly ground black pepper to taste

→ For the Pineapple Marinade

05 - 125ml pineapple juice (fresh or canned)
06 - 60ml soy sauce
07 - 3 tablespoons brown sugar
08 - 2 tablespoons honey
09 - 2 garlic cloves, minced
10 - 1 tablespoon fresh ginger, grated
11 - 2 tablespoons lime juice
12 - 1 teaspoon lime zest
13 - 1/2 teaspoon red pepper flakes (optional)
14 - 2 tablespoons fresh cilantro, chopped

# Steps:

01 - In a bowl, whisk together all marinade ingredients until well combined. Place chicken in a shallow dish and pour marinade over, ensuring all pieces are well coated. Cover and refrigerate for at least 2 hours or overnight for best flavor.
02 - Preheat grill to medium-high heat. Clean the grates thoroughly and oil them to prevent sticking.
03 - Remove chicken from marinade, reserving the liquid for basting. Thread chicken pieces onto skewers and grill for 6-7 minutes per side, or until internal temperature reaches 75°C. Baste occasionally with the reserved marinade while grilling.
04 - Place pineapple rings on the grill and cook for 2-3 minutes per side until caramelized with visible grill marks.
05 - Transfer chicken skewers to a serving plate and let rest for 5 minutes. Serve hot with the grilled pineapple rings.
