# Ingredients:

01 - 3 large carrots, peeled
02 - 1/2 tablespoon sesame oil or extra virgin olive oil

05 - 1 tablespoon honey
06 - Juice of 1/2 lime
07 - Sesame seeds, for garnish
08 - Green onion, chopped, for garnish

# Steps:

01 - Wash and peel the carrots. Continue using the peeler to create long carrot ribbons.
02 - In a large bowl, combine the sesame oil, rice wine vinegar, soy sauce, honey, and lime juice.
03 - Add the carrot ribbons to the bowl with the dressing and toss thoroughly to coat.
04 - Sprinkle sesame seeds and chopped green onions over the salad.
05 - Enjoy immediately or refrigerate for 30 minutes before serving to enhance the flavors.
