Spicy Shrimp Tacos Avocado Crema (Printable Version)

Zesty marinated shrimp in warm tortillas topped with creamy avocado-jalapeño sauce and crunchy cabbage slaw.

# Ingredients:

→ Shrimp Marinade

01 - 1 lb shrimp, uncooked, peeled, deveined, tails removed
02 - 1 tsp dark chili powder
03 - 1 tsp smoked paprika
04 - 1/2 tsp ground cumin
05 - 1/2 tsp dried oregano
06 - 1 tsp minced garlic or 1/2 tsp garlic powder
07 - 1/2 tsp red pepper flakes
08 - 1/2 tsp kosher salt
09 - Juice of 1 lime (about 2 tsp)
10 - 3 tbsp avocado oil

→ Avocado Crema

11 - 1 medium avocado, seed removed and flesh scooped out
12 - 1/2 cup fresh cilantro
13 - 1 jalapeño, seeds removed
14 - 3 cloves garlic, peeled
15 - 2 limes, juiced (3 tbsp)
16 - 1/2 cup plain Greek yogurt
17 - 3 tbsp avocado oil
18 - 3 tbsp water
19 - 1/2 tsp kosher salt

→ Assembly Components

20 - 1 cup shredded green cabbage
21 - 1 cup shredded purple cabbage
22 - 8-10 small flour or corn tortillas, lightly toasted
23 - Fresh cilantro for garnish
24 - Lime wedges for serving

# Steps:

01 - In a small bowl, whisk together 3 tbsp avocado oil, lime juice, chili powder, smoked paprika, cumin, oregano, garlic, red pepper flakes, and kosher salt. Add the prepped shrimp and stir to coat thoroughly. Refrigerate and marinate for no more than 30 minutes.
02 - While the shrimp is marinating, combine avocado, cilantro, jalapeño, garlic, lime juice, yogurt, avocado oil, water and kosher salt in a food processor. Pulse until smooth. If too thick, add another tablespoon of water. Set aside.
03 - Using a mandoline or sharp knife, shred the green and purple cabbages. Place in a small bowl, add a few spoonfuls of the avocado crema and toss to combine. Reserve the remaining crema for serving.
04 - Cook shrimp either in a cast iron skillet or on a grill over medium-high heat. Ensure shrimp are arranged in a single layer for even cooking. Cook for approximately 4-6 minutes, flipping halfway through to achieve nice coloration on both sides. If grilling, skewer the shrimp to prevent them from falling through the grates.
05 - Place a toasted tortilla down, add a layer of cabbage slaw, arrange several cooked shrimp on top, drizzle with avocado crema, and garnish with fresh cilantro. Serve with lime wedges for squeezing over tacos.

# Notes:

01 - For best results, marinate shrimp for no more than 30 minutes as the acid from lime juice can begin to cook the shrimp.
02 - For easier drizzling, transfer the avocado crema to a squeeze bottle or plastic bag with corner snipped.
