Slice all stone fruit thinly. Remove pits from cherries if using.

Add all prepared fruit to a large mixing bowl.

In a small bowl, whisk together lemon juice, maple syrup, vanilla, cinnamon, salt and thyme until well combined.

Pour dressing over fruit and toss gently to coat. Serve immediately or chill for 1 hour in the refrigerator before serving.
