Sweet Corn Avocado Salad (Printable Version)

# Ingredients:

01 - 4 ears sweet corn
02 - 1 semi-ripe avocado, cubed
03 - 1 jalapeño, seeds removed and finely chopped
04 - 3 green onions, finely chopped
05 - ¼ cup fresh cilantro, finely chopped

→ Dressing

06 - Juice of ½ lime
07 - 1 teaspoon olive oil (optional)
08 - 1 teaspoon tajin seasoning
09 - Salt and freshly ground black pepper to taste

# Steps:

01 - Fill a large saucepan with water and bring to a boil. Add the corn and boil for 2-3 minutes until vibrant. Drain and rinse with cool water.
02 - Lay each ear of corn flat on the cutting board and carefully slice the kernels off the cob.
03 - Add all ingredients to a mixing bowl and gently toss to combine. Adjust salt and pepper to taste.
