Savory ground beef and crisp vegetables tossed in a sweet-savory teriyaki sauce, ready in under 30 minutes for a perfect weeknight meal.

# Ingredients:

→ Main

01 - 1 lb lean ground beef

→ Vegetables

02 - 1 red bell pepper, sliced
03 - 1 yellow bell pepper, sliced
04 - 1 cup broccoli florets
05 - 1/2 cup shredded carrots
06 - 1/4 cup chopped green onions

→ Aromatics

07 - 3 cloves garlic, minced
08 - 1 teaspoon grated ginger

→ Sauce

09 - 1/4 cup low-sodium soy sauce
10 - 2 tablespoons honey
11 - 1 tablespoon rice vinegar
12 - 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
13 - 1 teaspoon sesame oil
14 - 1 tablespoon sesame seeds

→ Base

15 - Cooked rice or noodles for serving

→ Cooking Oil

16 - 2 tablespoons olive oil

# Steps:

01 - In a large skillet over medium heat, add olive oil and brown the ground beef until fully cooked. Drain excess fat if needed.
02 - Add garlic and ginger to the beef, sauté for 1 minute until fragrant.
03 - Stir in the bell peppers, broccoli, and carrots. Cook for 5–6 minutes until vegetables are just tender.
04 - In a small bowl, whisk together soy sauce, honey, rice vinegar, and sesame oil.
05 - Pour the sauce into the skillet and stir to combine. If you'd like a thicker sauce, stir in the cornstarch slurry and simmer for 2–3 minutes until it thickens.

# Notes:

01 - For best results, prepare all ingredients before starting to cook as this stir-fry comes together quickly.
02 - The cornstarch slurry is optional but recommended for a traditional thick teriyaki consistency.
