Preheat oven to 375°F (190°C). Rub chicken breasts with olive oil and season generously with salt and pepper.

In a large ovenproof skillet over medium-high heat, sear chicken breasts until golden brown, approximately 5 minutes per side.

Add minced garlic to the skillet and cook for 30 seconds until fragrant, being careful not to burn.

Pour chicken broth into the skillet, scraping the bottom to release flavorful browned bits. Stir in sour cream until well combined and allow to simmer for about 5 minutes.

Top each chicken breast with shredded Jack cheese. Transfer skillet to the preheated oven and bake for 15 minutes, or until cheese is melted and bubbly and chicken reaches 165°F (74°C) internal temperature.

Remove from oven and garnish with chopped green onions and a light sprinkle of paprika before serving.
