Line a muffin tin with paper liners or lightly grease it.

In a saucepan over medium heat, combine peanut butter and maple syrup. Stir continuously until smooth and well combined.

Remove from heat and stir in the rolled oats until fully coated.

Divide the oat mixture evenly into the muffin tin. Press down firmly to form cups.

If using, melt the dark chocolate chips and drizzle over the tops of the cups.

Refrigerate for 1-2 hours or until set. Once firm, remove from the tin and serve.
